Ethiopian Spiced Mushroom and Spinach Stew (Ye'abesha Gomen)

Ingredients

  • 1 tsp turmeric
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 8 oz mushrooms, sliced
  • 10 oz spinach, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and sauté until translucent.
  2. Add the garlic, ginger, cumin, turmeric, paprika, and cayenne pepper. Cook for 2 minutes, stirring constantly.
