Ingredients
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp turmeric
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 8 oz mushrooms, sliced
- 10 oz spinach, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and sauté until translucent.
- Add the garlic, ginger, cumin, turmeric, paprika, and cayenne pepper. Cook for 2 minutes, stirring constantly.
- Add the mushrooms and cook until they release their liquid and start to brown.
