Eurasian Chicken Curry Puffs (Pastéis de Frango Eurasianos)
Pastéis de Frango Eurasianos, also known as Eurasian Chicken Curry Puffs, are a popular snack in Eurasian cuisine. These delicious savory pastries are filled with a flavorful chicken curry mixture and then deep-fried to golden perfection.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into cubes
- 1/2 cup cold water
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon turmeric powder
- 1 lb cooked chicken, shredded
- 1/2 cup frozen peas
- Salt and pepper to taste
Instructions
- In a large bowl, combine the flour and salt. Add the cold butter cubes and use your fingers to rub the butter into the flour until it resembles breadcrumbs.
- Gradually add the cold water and mix until the dough comes together. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- In a large pan, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the curry powder and turmeric powder to the pan, and cook for 1-2 minutes until fragrant.
- Add the shredded chicken and frozen peas to the pan, and stir to combine. Season with salt and pepper to taste. Remove from heat and let the filling cool.
- Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Use a round cutter to cut out circles of dough.
- Place a spoonful of the chicken curry filling in the center of each dough circle. Fold the dough over the filling to form a half-moon shape, and crimp the edges with a fork to seal.
- Heat oil in a deep pan or fryer to 350°F (175°C). Fry the filled pastries in batches until golden brown, about 5-6 minutes per batch. Drain on paper towels.
- Serve the Pastéis de Frango Eurasianos hot and enjoy!
