Eurasian Chicken Curry Puffs (Pastéis de Frango Eurasianos)

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into cubes
  • 1/2 cup cold water
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric powder
  • 1 lb cooked chicken, shredded
  • 1/2 cup frozen peas
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the flour and salt. Add the cold butter cubes and use your fingers to rub the butter into the flour until it resembles breadcrumbs.
  2. Gradually add the cold water and mix until the dough comes together. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  3. In a large pan, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  4. Add the curry powder and turmeric powder to the pan, and cook for 1-2 minutes until fragrant.
  5. Add the shredded chicken and frozen peas to the pan, and stir to combine. Season with salt and pepper to taste. Remove from heat and let the filling cool.
  6. Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Use a round cutter to cut out circles of dough.
  7. Place a spoonful of the chicken curry filling in the center of each dough circle. Fold the dough over the filling to form a half-moon shape, and crimp the edges with a fork to seal.
  8. Heat oil in a deep pan or fryer to 350°F (175°C). Fry the filled pastries in batches until golden brown, about 5-6 minutes per batch. Drain on paper towels.
  9. Serve the Pastéis de Frango Eurasianos hot and enjoy!
