Eurasian Fish Otak-Otak (Otak-Otak Ikan Eurasia)

Ingredients

  • 500g white fish fillets, finely chopped
  • 1 cup coconut milk
  • 2 eggs
  • 3 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 teaspoon turmeric powder
  • 1 teaspoon salt
  • 10-12 banana leaves, for wrapping

Instructions

  1. In a large bowl, mix together the chopped fish, coconut milk, eggs, red curry paste, fish sauce, sugar, turmeric powder, and salt.
  2. Cut the banana leaves into 8x8 inch squares and briefly pass them over an open flame to soften them.
  3. Place a spoonful of the fish mixture onto each banana leaf square and wrap it into a neat parcel.
  4. Grill the wrapped fish parcels over medium heat for 10-15 minutes, or until the fish is cooked through.
