Ingredients
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, diced
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp chili powder
- 1 lb chicken, cut into pieces
- Salt to taste
- 2 cups water
- 1/2 cup coconut milk
- Fresh cilantro for garnish
Instructions
- Heat vegetable oil in a large pot over medium heat.
- Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.
- Add the diced tomatoes, cumin powder, coriander powder, turmeric powder, and chili powder. Cook for 5 minutes.
- Add the chicken pieces and cook until they are no longer pink.
- Pour in the water and bring the curry to a boil. Reduce heat, cover, and simmer for 30 minutes.
- Stir in the coconut milk and simmer for an additional 10 minutes.
- Garnish with fresh cilantro before serving.
