Everest Curry Delight

Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, diced
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • 1 lb chicken, cut into pieces
  • Salt to taste
  • 2 cups water
  • 1/2 cup coconut milk
  • Fresh cilantro for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.
  3. Add the diced tomatoes, cumin powder, coriander powder, turmeric powder, and chili powder. Cook for 5 minutes.
  4. Add the chicken pieces and cook until they are no longer pink.
  5. Pour in the water and bring the curry to a boil. Reduce heat, cover, and simmer for 30 minutes.
  6. Stir in the coconut milk and simmer for an additional 10 minutes.
  7. Garnish with fresh cilantro before serving.
