Exotic Ashlyamfu with Pumpkin (Ашлямфу с тыквой)

Ingredients

  • 200g ashlyamfu noodles
  • 1 small pumpkin, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Add the diced pumpkin to the pot and cook for 5 minutes, stirring occasionally.
  3. Season the pumpkin with ground cumin, paprika, salt, and pepper. Stir to coat the pumpkin evenly with the spices.
  4. Add the ashlyamfu noodles to the pot and gently mix them with the pumpkin and spices.
  5. Cover the pot and let the ashlyamfu and pumpkin cook together for 15-20 minutes, or until the pumpkin is tender and the noodles are cooked through.
  6. Once cooked, remove the pot from the heat and let it sit for a few minutes before serving.
  7. Garnish the ashlyamfu with fresh cilantro before serving.
