Ingredients
- 200g ashlyamfu noodles
- 1 small pumpkin, diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp vegetable oil
- 1 tsp ground cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced pumpkin to the pot and cook for 5 minutes, stirring occasionally.
- Season the pumpkin with ground cumin, paprika, salt, and pepper. Stir to coat the pumpkin evenly with the spices.
- Add the ashlyamfu noodles to the pot and gently mix them with the pumpkin and spices.
- Cover the pot and let the ashlyamfu and pumpkin cook together for 15-20 minutes, or until the pumpkin is tender and the noodles are cooked through.
- Once cooked, remove the pot from the heat and let it sit for a few minutes before serving.
- Garnish the ashlyamfu with fresh cilantro before serving.
