Exotic Chorpo (Чорпо)

Ingredients

  • 1 kg lamb, cut into chunks
  • 3 onions, chopped
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1/4 cup vegetable oil
  • 8 cups water

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onions and cook until they are soft and translucent.
  3. Add the lamb chunks and brown them on all sides.
  4. Pour in the water and bring to a boil.
  5. Reduce the heat to low, cover the pot, and let it simmer for 1.5 hours.
  6. Add the carrots, potatoes, salt, black pepper, and cumin. Cook for an additional 30 minutes or until the vegetables are tender.
  7. Adjust the seasoning if needed and serve hot.
