Exotic Chorpo (Чорпо)
Чорпо is a traditional Kyrgyz dish that is known for its rich and hearty flavors. This exotic dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 kg lamb, cut into chunks
- 3 onions, chopped
- 4 carrots, sliced
- 4 potatoes, diced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cumin
- 1/4 cup vegetable oil
- 8 cups water
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onions and cook until they are soft and translucent.
- Add the lamb chunks and brown them on all sides.
- Pour in the water and bring to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for 1.5 hours.
- Add the carrots, potatoes, salt, black pepper, and cumin. Cook for an additional 30 minutes or until the vegetables are tender.
- Adjust the seasoning if needed and serve hot.
