Exotic Hyderabadi Paneer Biryani

Ingredients

  • 2 cups basmati rice, soaked for 30 minutes and drained
  • 250g paneer, cut into cubes
  • 2 onions, thinly sliced
  • 1/2 cup yogurt
  • 1/4 cup mint leaves
  • 1/4 cup cilantro leaves
  • 4 green chilies, slit
  • 1 tbsp ginger-garlic paste
  • Whole spices: bay leaf, cinnamon, cardamom, cloves
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp biryani masala
  • Saffron strands soaked in 2 tbsp warm milk
  • Salt to taste
  • 4 cups water
  • 3 tbsp ghee
  • 2 tbsp oil

Instructions

  1. Heat ghee and oil in a large pot. Add the whole spices and sauté until fragrant.
  2. Add the sliced onions and cook until golden brown.
  3. Stir in the ginger-garlic paste, green chilies, mint leaves, and cilantro leaves. Cook for 2 minutes.
  4. Add the paneer cubes and cook for 5 minutes.
  5. In a separate pot, bring 4 cups of water to a boil. Add the soaked and drained basmati rice along with salt. Cook until the rice is 70% done. Drain the rice and keep aside.
  6. In the pot with the paneer mixture, layer half of the partially cooked rice. Sprinkle half of the biryani masala, red chili powder, and turmeric powder.
  7. Layer the remaining rice on top. Sprinkle the saffron-infused milk over the rice.
  8. Cover the pot with a tight-fitting lid and cook on low heat for 20 minutes.
  9. Once done, gently mix the layers and serve hot.
