Ingredients
- 3 large eggplants, sliced
- 1/2 cup olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 pound ground lamb
- 1 can (14 ounces) diced tomatoes
- 1/2 cup red wine
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1/4 teaspoon ground nutmeg
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
Instructions
- Preheat the oven to 375°F (190°C).
- Place the sliced eggplants on a baking sheet, brush with olive oil, and bake for 20 minutes until tender. Set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the ground lamb and cook until browned. Stir in the diced tomatoes, red wine, oregano, cinnamon, salt, and pepper. Simmer for 15 minutes.
- In a separate saucepan, melt the butter over medium heat. Stir in the flour to make a roux. Gradually whisk in the milk until the sauce thickens. Season with nutmeg, salt, and pepper.
- Spread half of the eggplant slices in a greased baking dish. Top with the lamb mixture, then the remaining eggplant slices. Pour the white sauce over the top and sprinkle with Parmesan cheese and breadcrumbs.
- Bake for 45 minutes until golden and bubbly. Let it rest for 10 minutes before serving.
