Extravagancia De Patacones (patacones Extravaganza)
Patacones, also known as tostones, are a popular dish in Ecuador made from green plantains. This recipe takes the traditional patacones to the next level by adding a variety of extravagant toppings, creating a mouthwatering dish perfect for sharing with friends and family.
Ingredients
- 2 green plantains, peeled and cut into 1-inch slices
- Vegetable oil for frying
- Salt to taste
- 1 cup refried black beans
- 1 avocado, sliced
- 1 cup pico de gallo
- 1/2 cup vegan cheese, shredded
- 1/4 cup pickled jalapeños
- 1/4 cup vegan sour cream
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Fry the plantain slices for 2-3 minutes on each side, until golden brown. Remove from the oil and drain on paper towels.
- Flatten the fried plantain slices using a tostonera or the bottom of a heavy glass.
- Return the flattened plantains to the hot oil and fry for an additional 2-3 minutes on each side, until crispy and golden brown. Drain on paper towels and sprinkle with salt.
- Top each patacone with a spoonful of refried black beans, avocado slices, pico de gallo, vegan cheese, pickled jalapeños, and a dollop of vegan sour cream.
