Ingredients
- 2 cups of medium-grain rice
- 1 can (15 oz) of pigeon peas, drained and rinsed
- 4 cups of water
- 1 onion, finely chopped
- 3 cloves of garlic, minced

- 1 tomato, diced
- 1/4 cup of sofrito
- 1/4 cup of alcaparrado (mix of olives and capers)
- 1/4 cup of tomato sauce
- 1 packet of sazón seasoning with annatto
- 1/4 cup of chopped cilantro
- Salt and pepper to taste
Instructions
- In a large caldero or heavy-bottomed pot, heat some oil over medium heat.
- Add the onions, garlic, and bell pepper, and cook until softened.
- Stir in the sofrito, alcaparrado, tomato sauce, sazón seasoning, and cilantro. Cook for a few minutes until fragrant.
- Add the rice and pigeon peas to the pot, and stir to combine with the sofrito mixture.
- Pour in the water, season with salt and pepper, and bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let the rice simmer for about 20-25 minutes, or until the liquid is absorbed and the rice is tender.
- Fluff the rice with a fork, and let it rest for a few minutes before serving.
