  • 3 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 tomato, diced
  • 1/4 cup of sofrito
  • 1/4 cup of alcaparrado (mix of olives and capers)
  • 1/4 cup of tomato sauce
  • 1 packet of sazón seasoning with annatto
  • 1/4 cup of chopped cilantro
  • Salt and pepper to taste

Instructions

  1. In a large caldero or heavy-bottomed pot, heat some oil over medium heat.
  2. Add the onions, garlic, and bell pepper, and cook until softened.
  3. Stir in the sofrito, alcaparrado, tomato sauce, sazón seasoning, and cilantro. Cook for a few minutes until fragrant.
  4. Add the rice and pigeon peas to the pot, and stir to combine with the sofrito mixture.
  5. Pour in the water, season with salt and pepper, and bring to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and let the rice simmer for about 20-25 minutes, or until the liquid is absorbed and the rice is tender.
  7. Fluff the rice with a fork, and let it rest for a few minutes before serving.
