Ingredients

  • 4 cups stale bread, cut into small pieces
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt to taste
  • 4 eggs (optional, for serving)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and cook until fragrant, about 1 minute.
  3. Add the bread pieces to the skillet and toss to coat with the oil and garlic.
  4. Sprinkle the paprika and salt over the bread crumbs and continue to cook, stirring occasionally, until the bread is crispy and golden brown, about 15 minutes.
  5. If desired, fry the eggs in a separate pan to serve on top of the migas.
  6. Divide the migas onto plates and top each serving with a fried egg, if using.
