Ingredients
- 4 cups stale bread, cut into small pieces
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon paprika
- Salt to taste
- 4 eggs (optional, for serving)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and cook until fragrant, about 1 minute.
- Add the bread pieces to the skillet and toss to coat with the oil and garlic.
- Sprinkle the paprika and salt over the bread crumbs and continue to cook, stirring occasionally, until the bread is crispy and golden brown, about 15 minutes.
- If desired, fry the eggs in a separate pan to serve on top of the migas.
- Divide the migas onto plates and top each serving with a fried egg, if using.
