Fa Gao
Fa Gao, also known as prosperity cake, is a traditional Chinese steamed cake that is often enjoyed during the Chinese New Year. It is characterized by its fluffy texture and distinctive cracked top, symbolizing prosperity and good fortune.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup water
- 1 1/2 tsp baking powder
- 1/4 tsp alkaline water (lye water)
- Red food coloring (optional)
Instructions
- In a large bowl, mix the all-purpose flour and granulated sugar together.
- In a separate bowl, combine the water, baking powder, and alkaline water. Gradually add this mixture to the dry ingredients, stirring until smooth.
- If desired, add a few drops of red food coloring to achieve the traditional red color of fa gao.
- Pour the batter into greased fa gao molds, filling them about 2/3 full.
- Steam the fa gao over high heat for 15 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the fa gao from the steamer and let them cool before serving.
