Fa Gao, also known as prosperity cake, is a traditional Chinese steamed cake that is often enjoyed during the Chinese New Year. It is characterized by its fluffy texture and distinctive cracked top, symbolizing prosperity and good fortune.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup water
  • 1 1/2 tsp baking powder
  • 1/4 tsp alkaline water (lye water)
  • Red food coloring (optional)

Instructions

  1. In a large bowl, mix the all-purpose flour and granulated sugar together.
  2. In a separate bowl, combine the water, baking powder, and alkaline water. Gradually add this mixture to the dry ingredients, stirring until smooth.
  3. If desired, add a few drops of red food coloring to achieve the traditional red color of fa gao.
  4. Pour the batter into greased fa gao molds, filling them about 2/3 full.
  5. Steam the fa gao over high heat for 15 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove the fa gao from the steamer and let them cool before serving.
