Ingredients

  • 1 lb dried white beans
  • 4 chorizo sausages
  • 1 ham hock
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 bay leaves
  • 1 tsp sweet paprika
  • Salt and pepper to taste

Instructions

  1. Soak the dried white beans in water overnight.
  2. In a large pot, combine the soaked beans, chorizo sausages, ham hock, chopped onion, minced garlic, bay leaves, and sweet paprika.
  3. Add enough water to cover the ingredients and bring to a boil.
  4. Reduce the heat and simmer for 2 hours, or until the beans are tender and the flavors have melded together.
  5. Season with salt and pepper to taste before serving.
