Fafda Fondue Fiesta

Ingredients
- 2 cups besan (chickpea flour)
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon ajwain (carom seeds)
- Salt to taste
- Water as needed
- Oil for frying
- 200g grated cheese (use a mix of cheddar and mozzarella)
- 1 tablespoon cornstarch
- 1/2 cup milk
- 1 clove garlic, minced
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala
- 1 tablespoon butter
Instructions
- In a bowl, mix besan, turmeric powder, red chili powder, ajwain, and salt. Gradually add water to form a smooth dough. Rest the dough for 15 minutes.
- Divide the dough into small portions and roll them into thin strips (fafda). Heat oil in a pan and fry the fafda until crispy and golden brown. Drain on paper towels and set aside.
- In a saucepan, melt butter and sauté garlic. Add cornstarch and cook for a minute. Gradually pour in the milk while stirring continuously. Add the grated cheese and continue stirring until the cheese melts and the sauce thickens.
- Season the fondue sauce with black pepper, cumin powder, and garam masala. Adjust the consistency with more milk if needed.
- Transfer the fondue sauce to a fondue pot or a heatproof serving dish. Serve with the crispy fafda strips for dipping.
