Fafda Fondue Fiesta

Ingredients

  • 2 cups besan (chickpea flour)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon ajwain (carom seeds)
  • Salt to taste
  • Water as needed
  • Oil for frying
  • 200g grated cheese (use a mix of cheddar and mozzarella)
  • 1 tablespoon cornstarch
  • 1/2 cup milk
  • 1 clove garlic, minced
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1 tablespoon butter

Instructions

  1. In a bowl, mix besan, turmeric powder, red chili powder, ajwain, and salt. Gradually add water to form a smooth dough. Rest the dough for 15 minutes.
  2. Divide the dough into small portions and roll them into thin strips (fafda). Heat oil in a pan and fry the fafda until crispy and golden brown. Drain on paper towels and set aside.
  3. In a saucepan, melt butter and sauté garlic. Add cornstarch and cook for a minute. Gradually pour in the milk while stirring continuously. Add the grated cheese and continue stirring until the cheese melts and the sauce thickens.
  4. Season the fondue sauce with black pepper, cumin powder, and garam masala. Adjust the consistency with more milk if needed.
  5. Transfer the fondue sauce to a fondue pot or a heatproof serving dish. Serve with the crispy fafda strips for dipping.
