Faikai (taro And Coconut Pudding)
Faikai is a traditional dessert from Wallis and Futuna cuisine, made with taro and coconut milk. This creamy and comforting pudding is a popular sweet treat in the islands.
Ingredients
- 2 cups taro, peeled and diced
- 1 can (14 oz) coconut milk
- 1/2 cup sugar
- 1/4 teaspoon salt
Instructions
- In a pot, combine the diced taro, coconut milk, sugar, and salt.
- Bring the mixture to a gentle boil over medium heat, then reduce the heat and simmer for 25-30 minutes, or until the taro is tender.
- Stir occasionally to prevent sticking and to help break down the taro into a creamy consistency.
- Once the taro is soft and the mixture has thickened, remove from heat and let it cool slightly.
- Transfer the pudding to serving bowls and refrigerate for at least 2 hours before serving.
