Ingredients

  • 2 cups taro, peeled and diced
  • 1 can (14 oz) coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt

Instructions

  1. In a pot, combine the diced taro, coconut milk, sugar, and salt.
  2. Bring the mixture to a gentle boil over medium heat, then reduce the heat and simmer for 25-30 minutes, or until the taro is tender.
  3. Stir occasionally to prevent sticking and to help break down the taro into a creamy consistency.
  4. Once the taro is soft and the mixture has thickened, remove from heat and let it cool slightly.
