Ingredients

  • 1 cup of jasmine rice
  • 2 cups of coconut milk
  • 1/2 cup of sugar
  • 1/4 teaspoon of salt
  • 1 teaspoon of vanilla extract

Instructions

  1. In a saucepan, combine the jasmine rice, coconut milk, sugar, and salt.
  2. Bring the mixture to a boil over medium heat, then reduce the heat to low and let it simmer for 20-25 minutes, stirring occasionally.
  3. Once the rice is cooked and the mixture has thickened, remove it from the heat and stir in the vanilla extract.
  4. Divide the pudding into serving dishes and let it cool to room temperature before serving.
