Faikakai, also known as coconut rice pudding, is a traditional dessert from Tuvalu that is simple to make and bursting with tropical flavors.
Ingredients
- 1 cup of jasmine rice
- 2 cups of coconut milk
- 1/2 cup of sugar
- 1/4 teaspoon of salt
- 1 teaspoon of vanilla extract
Instructions
- In a saucepan, combine the jasmine rice, coconut milk, sugar, and salt.
- Bring the mixture to a boil over medium heat, then reduce the heat to low and let it simmer for 20-25 minutes, stirring occasionally.
- Once the rice is cooked and the mixture has thickened, remove it from the heat and stir in the vanilla extract.
- Divide the pudding into serving dishes and let it cool to room temperature before serving.
