Faikakai Kastadi, also known as Coconut Milk Custard, is a traditional dessert from Tuvalu. This creamy and aromatic custard is made with coconut milk and is a popular treat for special occasions and gatherings.
Ingredients
- 4 cups coconut milk
- 1 cup sugar
- 1/2 cup cornstarch
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground nutmeg
Instructions
- In a saucepan, combine the coconut milk and sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved.
- In a small bowl, mix the cornstarch with a little water to create a slurry. Slowly pour the cornstarch slurry into the coconut milk mixture, stirring constantly.
- Continue to cook and stir the mixture until it thickens, about 10-15 minutes.
- Remove the saucepan from the heat and stir in the vanilla extract.
- Pour the custard into serving dishes and sprinkle with ground nutmeg.
- Chill in the refrigerator for at least 2 hours before serving.
