Ingredients

  • 4 cups coconut milk
  • 1 cup sugar
  • 1/2 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg

Instructions

  1. In a saucepan, combine the coconut milk and sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved.
  2. In a small bowl, mix the cornstarch with a little water to create a slurry. Slowly pour the cornstarch slurry into the coconut milk mixture, stirring constantly.
  3. Continue to cook and stir the mixture until it thickens, about 10-15 minutes.
  4. Remove the saucepan from the heat and stir in the vanilla extract.
  5. Pour the custard into serving dishes and sprinkle with ground nutmeg.
  6. Chill in the refrigerator for at least 2 hours before serving.
