Falafel Burger With Mint Yogurt Sauce

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • Salt to taste
  • 1/4 cup all-purpose flour
  • 4 burger buns
  • Lettuce, tomato, and onion slices for topping
  • 1 cup Greek yogurt
  • 2 tbsp chopped fresh mint
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a food processor, combine the chickpeas, parsley, onion, garlic, cumin, coriander, cayenne pepper, and salt. Pulse until the mixture is coarsely ground but not pureed.
