Falafel Fiesta

Ingredients

  • 1 cup dried chickpeas
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 1 tsp baking powder
  • 4-6 tbsp all-purpose flour
  • Vegetable oil for frying

Instructions

  1. Place dried chickpeas in a large bowl and cover with cold water. Let soak overnight, then drain.
  2. In a food processor, combine the soaked chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, cayenne pepper, salt, and pepper. Pulse until mixture is finely ground but not pureed.
  3. Sprinkle in the baking powder and 4 tablespoons of flour, and pulse until combined. If the mixture seems too wet, add the remaining flour as needed.
  4. Transfer the mixture to a bowl, cover, and refrigerate for 1-2 hours.
  5. Form the falafel mixture into small balls or patties and fry in hot oil until golden brown and crispy, about 3-4 minutes per side.
  6. Remove falafel from oil and drain on paper towels. Serve hot with pita bread, hummus, and tahini sauce.
