Ingredients

  • 1 ½ cups dried chickpeas, soaked overnight
  • 1 small onion, chopped
  • 3 cloves garlic
  • 1 cup fresh parsley
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1 tsp baking powder
  • 4 pita bread rounds
  • Shredded lettuce, diced tomatoes, and sliced cucumbers for serving
  • Tahini sauce and hot sauce for drizzling

Instructions

  1. In a food processor, combine the soaked chickpeas, onion, garlic, parsley, cumin, coriander, salt, black pepper, and cayenne pepper. Pulse until the mixture is finely ground but not pureed.
  2. Sprinkle the baking powder over the mixture and pulse to combine. The mixture should hold together when squeezed into a ball.
  3. Form the mixture into small balls and flatten slightly to form patties.
  4. Heat oil in a pan over medium heat and fry the falafel patties until golden brown and crispy, about 3-4 minutes per side.
  5. Warm the pita bread rounds in a dry skillet or microwave.
  6. Stuff each pita with falafel patties, shredded lettuce, diced tomatoes, and sliced cucumbers.
  7. Drizzle with tahini sauce and hot sauce, then serve immediately.
