Ingredients

  • 1 15-ounce can chickpeas, drained and rinsed
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 4 pita bread rounds
  • 1 cup shredded lettuce
  • 1 large tomato, diced
  • 1/2 cucumber, thinly sliced
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 1 clove garlic, minced
  • Salt to taste

Instructions

  1. In a food processor, combine the chickpeas, onion, garlic, parsley, cumin, coriander, cayenne pepper, salt, and pepper. Pulse until the mixture is coarsely ground but not pureed.
  2. Transfer the mixture to a bowl and stir in the flour and baking powder. Shape the mixture into small balls and flatten slightly to form falafel patties.
  3. Heat oil in a skillet over medium heat. Cook the falafel patties for 3-4 minutes on each side, until golden brown and crispy.
  4. While the falafel is cooking, warm the pita bread in a toaster or oven.
  5. Prepare the tahini dressing by whisking together the tahini, lemon juice, water, garlic, and salt in a small bowl.
  6. Once the falafel and pita bread are ready, assemble the stuffed pita pockets by placing falafel, lettuce, tomato, and cucumber inside each pita. Drizzle with tahini dressing.
