Ingredients
- 1 15-ounce can chickpeas, drained and rinsed
- 1 small onion, chopped

- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 4 pita bread rounds
- 1 cup shredded lettuce
- 1 large tomato, diced
- 1/2 cucumber, thinly sliced
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 2 tablespoons water
- 1 clove garlic, minced
- Salt to taste
Instructions
- In a food processor, combine the chickpeas, onion, garlic, parsley, cumin, coriander, cayenne pepper, salt, and pepper. Pulse until the mixture is coarsely ground but not pureed.
- Transfer the mixture to a bowl and stir in the flour and baking powder. Shape the mixture into small balls and flatten slightly to form falafel patties.
- Heat oil in a skillet over medium heat. Cook the falafel patties for 3-4 minutes on each side, until golden brown and crispy.
- While the falafel is cooking, warm the pita bread in a toaster or oven.
- Prepare the tahini dressing by whisking together the tahini, lemon juice, water, garlic, and salt in a small bowl.
- Once the falafel and pita bread are ready, assemble the stuffed pita pockets by placing falafel, lettuce, tomato, and cucumber inside each pita. Drizzle with tahini dressing.
