Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp baking soda
  • Vegetable oil, for frying

Instructions

  1. Drain the soaked chickpeas and pat them dry with a paper towel.
  2. In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, cayenne pepper, salt, black pepper, and baking soda. Pulse until the mixture is finely ground but not pureed.
  3. Transfer the mixture to a bowl, cover, and refrigerate for 1 hour.
  4. Form the mixture into small balls or patties and place them on a baking sheet.
  5. In a large skillet, heat 1 inch of vegetable oil over medium-high heat.
  6. Fry the falafel in batches until deep golden brown and crispy, about 4 minutes per batch.
  7. Transfer to a paper towel-lined plate to drain excess oil.
