Ingredients
- 2 cups dried chickpeas, soaked overnight
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp baking soda
- Vegetable oil, for frying
Instructions
- Drain the soaked chickpeas and pat them dry with a paper towel.
- In a food processor, combine the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, cayenne pepper, salt, black pepper, and baking soda. Pulse until the mixture is finely ground but not pureed.
- Transfer the mixture to a bowl, cover, and refrigerate for 1 hour.
- Form the mixture into small balls or patties and place them on a baking sheet.
- In a large skillet, heat 1 inch of vegetable oil over medium-high heat.
- Fry the falafel in batches until deep golden brown and crispy, about 4 minutes per batch.
- Transfer to a paper towel-lined plate to drain excess oil.
