Falafel Waffle With Tahini Sauce

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1/4 cup chopped red onion
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • 1/4 cup chickpea flour
  • 1/2 tsp baking powder
  • Salt to taste
  • Non-stick cooking spray
  • 1/2 cup tahini
  • 2-3 tbsp lemon juice
  • Water, as needed

Instructions

  1. In a food processor, combine the chickpeas, parsley, red onion, garlic, cumin, coriander, cayenne pepper, chickpea flour, baking powder, and salt. Pulse until the mixture is well combined but still slightly chunky.
  2. Preheat the waffle maker and lightly coat it with non-stick cooking spray.
