Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed

- 1/4 cup chopped red onion
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/4 tsp cayenne pepper
- 1/4 cup chickpea flour
- 1/2 tsp baking powder
- Salt to taste
- Non-stick cooking spray
- 1/2 cup tahini
- 2-3 tbsp lemon juice
- Water, as needed

Instructions
- In a food processor, combine the chickpeas, parsley, red onion, garlic, cumin, coriander, cayenne pepper, chickpea flour, baking powder, and salt. Pulse until the mixture is well combined but still slightly chunky.
- Preheat the waffle maker and lightly coat it with non-stick cooking spray.
- Spoon the falafel mixture onto the waffle maker, spreading it evenly. Close the lid and cook for 5-7 minutes, or until the falafel waffle is golden and crispy.
