Ingredients

  • 500g mixed fish (salmon, haddock, cod), cut into chunks
  • 1 onion, finely chopped
  • 2 hard-boiled eggs, sliced
  • 300ml fish stock
  • 300ml milk
  • 50g butter
  • 50g all-purpose flour
  • 1 tbsp chopped parsley
  • Salt and pepper to taste
  • 800g potatoes, peeled and chopped
  • 50g grated cheddar cheese (optional)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Place the fish, onion, and hard-boiled eggs in a baking dish.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
  4. Gradually whisk in the fish stock and milk. Cook, stirring constantly, until the sauce thickens.
  5. Stir in the parsley, salt, and pepper. Pour the sauce over the fish mixture in the baking dish.
  6. Cook the potatoes in boiling water until tender. Drain and mash with a little butter and milk.
  7. Spread the mashed potatoes over the fish mixture. Sprinkle with grated cheese, if using.
  8. Bake in the preheated oven for 30-40 minutes, or until the top is golden and the filling is bubbling.
