Falmouth Fish Pie

Ingredients
- 500g mixed fish (salmon, haddock, cod), cut into chunks
- 1 onion, finely chopped
- 2 hard-boiled eggs, sliced
- 300ml fish stock
- 300ml milk
- 50g butter
- 50g all-purpose flour
- 1 tbsp chopped parsley
- Salt and pepper to taste
- 800g potatoes, peeled and chopped
- 50g grated cheddar cheese (optional)
Instructions
- Preheat the oven to 200°C (400°F).
- Place the fish, onion, and hard-boiled eggs in a baking dish.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
- Gradually whisk in the fish stock and milk. Cook, stirring constantly, until the sauce thickens.
- Stir in the parsley, salt, and pepper. Pour the sauce over the fish mixture in the baking dish.
- Cook the potatoes in boiling water until tender. Drain and mash with a little butter and milk.
- Spread the mashed potatoes over the fish mixture. Sprinkle with grated cheese, if using.
- Bake in the preheated oven for 30-40 minutes, or until the top is golden and the filling is bubbling.
