Falooda (creamy Cardamom And Saffron Milkshake)
Falooda is a popular Afghan dessert that is known for its creamy texture and aromatic flavors. This delightful milkshake is infused with cardamom and saffron, making it a refreshing and indulgent treat.
Ingredients
- 4 cups whole milk
- 1/2 cup sugar
- 1/2 teaspoon ground cardamom
- A pinch of saffron threads
- 1/4 cup falooda sev (vermicelli noodles)
- 2 tablespoons rose syrup
- 1/4 cup soaked basil seeds (tukmaria)
- Vanilla ice cream for serving
Instructions
- In a saucepan, heat the milk over medium heat. Add sugar, ground cardamom, and saffron. Stir until the sugar is dissolved and the milk is infused with the flavors. Remove from heat and let it cool.
- Cook the falooda sev in boiling water according to the package instructions. Drain and rinse with cold water. Set aside.
- Soak the basil seeds in water for about 15 minutes until they swell up.
- To assemble the falooda, divide the cooked falooda sev among serving glasses. Pour rose syrup over the sev. Add a spoonful of soaked basil seeds.
- Pour the cooled cardamom and saffron milk over the falooda layers. Top each glass with a scoop of vanilla ice cream.
- Garnish with additional basil seeds and a sprinkle of ground cardamom. Serve immediately and enjoy!
