Fan Tiao (xinjiang Style Rice Noodles)

Ingredients

  • 400g rice noodles
  • 200g lamb, thinly sliced
  • 2 tomatoes, diced
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Boil the rice noodles according to the package instructions. Drain and set aside.
  2. In a large pan, heat the vegetable oil over medium heat. Add the sliced lamb and cook until browned.
  3. Add the onions, garlic, cumin, and chili powder to the pan. Cook until the onions are soft and fragrant.
  4. Add the diced tomatoes to the pan and cook for a few minutes until they start to break down.
  5. Stir in the cooked rice noodles and toss to combine with the lamb and tomato mixture. Cook for an additional 2-3 minutes.
  6. Season with salt to taste and garnish with fresh cilantro before serving.
