Farcous: Stuffed Swiss Chard Rolls

Ingredients
- 1 bunch of Swiss chard leaves
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1/2 lb ground pork
- 1/2 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh chives
- 1/4 cup grated Parmesan cheese
- 2 eggs
- Salt and pepper to taste
Instructions
- Blanch the Swiss chard leaves in boiling water for 2 minutes, then transfer to an ice bath to cool. Pat dry with paper towels.
- In a large bowl, mix together the onion, garlic, ground pork, ground beef, breadcrumbs, parsley, mint, chives, Parmesan cheese, eggs, salt, and pepper.
- Place a spoonful of the filling onto each Swiss chard leaf and roll it up, tucking in the sides as you go.
- Heat some oil in a large skillet over medium heat. Place the stuffed Swiss chard rolls seam side down in the skillet and cook for about 5 minutes on each side, until golden brown and cooked through.
- Serve the Farcous hot, with your choice of side dishes.
