Farcous: Stuffed Swiss Chard Rolls

Ingredients

  • 1 bunch of Swiss chard leaves
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/2 lb ground pork
  • 1/2 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh chives
  • 1/4 cup grated Parmesan cheese
  • 2 eggs
  • Salt and pepper to taste

Instructions

  1. Blanch the Swiss chard leaves in boiling water for 2 minutes, then transfer to an ice bath to cool. Pat dry with paper towels.
  2. In a large bowl, mix together the onion, garlic, ground pork, ground beef, breadcrumbs, parsley, mint, chives, Parmesan cheese, eggs, salt, and pepper.
  3. Place a spoonful of the filling onto each Swiss chard leaf and roll it up, tucking in the sides as you go.
  4. Heat some oil in a large skillet over medium heat. Place the stuffed Swiss chard rolls seam side down in the skillet and cook for about 5 minutes on each side, until golden brown and cooked through.
  5. Serve the Farcous hot, with your choice of side dishes.
