Ingredients

  • 2 cups chickpea flour
  • 2 1/2 cups water
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped

Instructions

  1. In a large mixing bowl, whisk together the chickpea flour, water, olive oil, salt, and black pepper until smooth. Let the batter rest for at least 30 minutes.
  2. Preheat the oven to 450°F (230°C). Place a well-seasoned 12-inch cast iron skillet in the oven and heat for 10 minutes.
  3. Carefully remove the hot skillet from the oven and pour in a thin layer of the batter. Sprinkle the chopped rosemary on top.
  4. Bake for 15-20 minutes, or until the farinata is set and the edges are crispy and golden brown.
  5. Slice the farinata into wedges and serve hot.
