Farinata (savory Chickpea Pancakes)
Farinata, also known as Socca, is a traditional dish from the Ligurian cuisine, made with chickpea flour. It's a simple and delicious recipe that can be enjoyed as a snack, appetizer, or even a main course.
Ingredients
- 2 cups chickpea flour
- 2 1/2 cups water
- 1/4 cup extra virgin olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
Instructions
- In a large mixing bowl, whisk together the chickpea flour, water, olive oil, salt, and black pepper until smooth. Let the batter rest for at least 30 minutes.
- Preheat the oven to 450°F (230°C). Place a well-seasoned 12-inch cast iron skillet in the oven and heat for 10 minutes.
- Carefully remove the hot skillet from the oven and pour in a thin layer of the batter. Sprinkle the chopped rosemary on top.
- Bake for 15-20 minutes, or until the farinata is set and the edges are crispy and golden brown.
- Slice the farinata into wedges and serve hot.
