Ingredients
- 500g fresh white fish fillets, such as cod or haddock
- 1 onion, finely chopped
- 2 eggs
- 100g breadcrumbs

Instructions
- Cut the fish fillets into small pieces and place them in a food processor. Pulse until the fish is finely chopped.
- In a large bowl, combine the chopped fish, chopped onion, eggs, breadcrumbs, parsley, salt, and pepper. Mix well until everything is evenly combined.
- Form the fish mixture into small patties and place them on a plate.
- Heat vegetable oil in a large skillet over medium heat. Fry the fish cakes in batches for 3-4 minutes on each side, or until golden brown and cooked through.
- Remove the fish cakes from the skillet and place them on a paper towel to drain any excess oil.
- Serve the Fiskakjøt hot with a side of potatoes and a simple salad.
