Faroese Fish Cakes (Fiskakjøt)

Ingredients

  • 500g fresh white fish fillets, such as cod or haddock
  • 1 onion, finely chopped
  • 2 eggs
  • 100g breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Cut the fish fillets into small pieces and place them in a food processor. Pulse until the fish is finely chopped.
  2. In a large bowl, combine the chopped fish, chopped onion, eggs, breadcrumbs, parsley, salt, and pepper. Mix well until everything is evenly combined.
  3. Form the fish mixture into small patties and place them on a plate.
  4. Heat vegetable oil in a large skillet over medium heat. Fry the fish cakes in batches for 3-4 minutes on each side, or until golden brown and cooked through.
  5. Remove the fish cakes from the skillet and place them on a paper towel to drain any excess oil.
  6. Serve the Fiskakjøt hot with a side of potatoes and a simple salad.
