Faroese Lamb Roulade (Lambatréskur)
Lambatréskur, also known as Faroese Lamb Roulade, is a traditional dish from the Faroe Islands that features tender lamb wrapped around a flavorful filling. This dish is perfect for a special occasion or a cozy family dinner.
Ingredients
- 800g boneless lamb shoulder
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 100g bacon, diced
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Faroese cheese
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup beef or vegetable broth
Instructions
- Preheat the oven to 180°C (350°F).
- Butterfly the lamb shoulder and pound it to an even thickness.
- In a skillet, cook the bacon until crispy, then add the onion and garlic and cook until softened.
- Remove the skillet from the heat and stir in the breadcrumbs, parsley, and Faroese cheese. Season with salt and pepper.
- Spoon the filling onto the lamb, then roll it up and secure with kitchen twine.
- Heat the olive oil in a Dutch oven over medium-high heat. Sear the lamb roulade until browned on all sides.
- Pour the broth into the Dutch oven, cover, and transfer to the preheated oven. Cook for 1.5 to 2 hours, or until the lamb is tender.
- Remove the lambatréskur from the oven and let it rest for 10 minutes before slicing.
