Faroese Lamb Skewers (Lambaspjøt)

Ingredients

  • 1 1/2 lbs (700g) lamb shoulder, cut into 1-inch cubes
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine the chopped onion, minced garlic, olive oil, dried thyme, dried rosemary, salt, and pepper.
  2. Add the cubed lamb to the bowl and toss to coat the meat evenly with the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated lamb cubes onto the soaked wooden skewers.
  5. Grill the lamb skewers for about 12-15 minutes, turning occasionally, until the meat is cooked to your desired doneness.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
