Ingredients
- 1 1/2 lbs (700g) lamb shoulder, cut into 1-inch cubes
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine the chopped onion, minced garlic, olive oil, dried thyme, dried rosemary, salt, and pepper.
- Add the cubed lamb to the bowl and toss to coat the meat evenly with the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated lamb cubes onto the soaked wooden skewers.
- Grill the lamb skewers for about 12-15 minutes, turning occasionally, until the meat is cooked to your desired doneness.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
