Ingredients
- 4 medium potatoes, peeled and cut into chunks
- 1 pound green beans, trimmed and cut into 2-inch pieces
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the diced tomatoes to the pot, and season with salt and pepper. Cook for 5 minutes, stirring occasionally.
- Add the potatoes and green beans to the pot, and stir to combine with the tomato mixture.
- Pour enough water to cover the vegetables, bring to a boil, then reduce the heat to low and simmer for 45-50 minutes, or until the potatoes are tender.
- Adjust the seasoning if needed, and serve the Fasce in Umido hot, with a drizzle of olive oil on top.
