Ingredients

  • 1 cup dried white beans
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Soak the dried white beans in water overnight.
  2. In a large pot, sauté the onion, carrots, and celery until softened.
  3. Add the garlic and cook for another minute.
  4. Stir in the diced tomatoes, soaked white beans, vegetable broth, and bay leaves.
  5. Bring the soup to a boil, then reduce the heat and simmer for 1 hour, or until the beans are tender.
  6. Season with salt and pepper to taste.
  7. Remove the bay leaves before serving.
