Fasolada Fiesta

Ingredients
- 1 cup dried white beans
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Soak the dried white beans in water overnight.
- In a large pot, sauté the onion, carrots, and celery until softened.
- Add the garlic and cook for another minute.
- Stir in the diced tomatoes, soaked white beans, vegetable broth, and bay leaves.
- Bring the soup to a boil, then reduce the heat and simmer for 1 hour, or until the beans are tender.
- Season with salt and pepper to taste.
- Remove the bay leaves before serving.
