Fasule (traditional Kosovan Bean Soup)

Ingredients
- 1 pound dried white beans, soaked overnight
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat. Add the onion and garlic, and cook until softened.
- Add the carrots and celery, and cook for another 5 minutes.
- Stir in the diced tomatoes, vegetable broth, soaked beans, and thyme. Bring to a boil, then reduce heat and simmer for 1 hour, or until the beans are tender.
- Season with salt and pepper to taste.
