Ingredients

  • 1 pound dried white beans, soaked overnight
  • 1 onion, finely chopped

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme

Instructions
