Fatayer Jebneh (cheese And Spinach Fatayer)
Fatayer Jebneh is a popular Syrian Jewish pastry filled with a delicious combination of cheese and spinach. These savory pastries are perfect for a snack, appetizer, or light meal.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon active dry yeast
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 cup olive oil
- 1 cup feta cheese, crumbled
- 1 cup fresh spinach, chopped
- 1/4 cup parsley, chopped
- 1/4 teaspoon black pepper
- 1/4 teaspoon sumac (optional)
Instructions
- In a bowl, mix the flour, yeast, sugar, and salt. Add the olive oil and gradually add water while kneading until the dough is smooth. Cover and let it rise for 1 hour.
- In another bowl, mix the feta cheese, spinach, parsley, black pepper, and sumac.
- Preheat the oven to 375°F (190°C).
- Divide the dough into 12 pieces. Roll each piece into a circle and place a spoonful of the cheese and spinach mixture in the center. Fold the edges to form a triangle, pinching the corners to seal.
- Place the fatayer on a baking sheet and bake for 15-20 minutes, or until golden brown.
