Fatayer Jebneh (cheese And Spinach Fatayer)

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 cup olive oil
  • 1 cup feta cheese, crumbled
  • 1 cup fresh spinach, chopped
  • 1/4 cup parsley, chopped
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sumac (optional)

Instructions

  1. In a bowl, mix the flour, yeast, sugar, and salt. Add the olive oil and gradually add water while kneading until the dough is smooth. Cover and let it rise for 1 hour.
  2. In another bowl, mix the feta cheese, spinach, parsley, black pepper, and sumac.
  3. Preheat the oven to 375°F (190°C).
  4. Divide the dough into 12 pieces. Roll each piece into a circle and place a spoonful of the cheese and spinach mixture in the center. Fold the edges to form a triangle, pinching the corners to seal.
  5. Place the fatayer on a baking sheet and bake for 15-20 minutes, or until golden brown.
