Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1/2 cup cooked rice
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped walnuts
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Chop the mushroom stems and sauté them with onion, garlic, and olive oil until softened.
  3. In a bowl, combine the cooked rice, sautéed mushroom mixture, chopped parsley, walnuts, and feta cheese. Season with salt and pepper.
  4. Fill each mushroom cap with the rice mixture and place them on a baking sheet.
