Ingredients
- 12 large mushrooms, stems removed and reserved
- 1/2 cup cooked rice
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1/4 cup chopped parsley
- 1/4 cup chopped walnuts
- 1/4 cup crumbled feta cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Chop the mushroom stems and sauté them with onion, garlic, and olive oil until softened.
- In a bowl, combine the cooked rice, sautéed mushroom mixture, chopped parsley, walnuts, and feta cheese. Season with salt and pepper.
- Fill each mushroom cap with the rice mixture and place them on a baking sheet.
- Bake for 20-25 minutes until the mushrooms are tender and the filling is golden brown.
