Fattoush
Fattoush is a refreshing and colorful Middle Eastern salad that is perfect for a light and healthy meal. It is made with a variety of fresh vegetables, herbs, and toasted pita bread, all tossed in a tangy and zesty dressing.
Ingredients
- 2 tomatoes, diced
- 1 cucumber, diced
- 1 red bell pepper, chopped
- 1/2 red onion, thinly sliced
- 1 cup chopped fresh parsley
- 1/2 cup chopped fresh mint
- 2 pita bread, toasted and broken into pieces
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 tsp sumac
- Salt and pepper to taste
Instructions
- In a large bowl, combine the tomatoes, cucumber, bell pepper, red onion, parsley, and mint.
- Add the toasted pita bread pieces to the bowl.
- In a small bowl, whisk together the olive oil, lemon juice, sumac, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss to combine.
- Let the salad sit for a few minutes to allow the flavors to meld before serving.
