Ingredients

  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1 red bell pepper, chopped
  • 1/2 red onion, thinly sliced
  • 1 cup chopped fresh parsley
  • 1/2 cup chopped fresh mint
  • 2 pita bread, toasted and broken into pieces
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tsp sumac
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the tomatoes, cucumber, bell pepper, red onion, parsley, and mint.
  2. Add the toasted pita bread pieces to the bowl.
  3. In a small bowl, whisk together the olive oil, lemon juice, sumac, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad and toss to combine.
  5. Let the salad sit for a few minutes to allow the flavors to meld before serving.
