Ingredients

  • 2 tomatoes, diced
  • 1 cucumber, chopped
  • 1 red onion, thinly sliced
  • 1 green bell pepper, diced
  • 1 cup fresh parsley, chopped
  • 1 cup fresh mint leaves, chopped
  • 1 cup radishes, thinly sliced
  • 1 cup pomegranate seeds
  • 1 cup toasted pita bread, broken into small pieces
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • Salt and pepper to taste
  • 1 teaspoon sumac (special ingredient for the twist)

Instructions

  1. In a large bowl, combine the tomatoes, cucumber, red onion, bell pepper, parsley, mint, radishes, and pomegranate seeds.
  2. Add the toasted pita bread pieces to the bowl.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, pepper, and sumac.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Let the salad sit for 5 minutes to allow the flavors to meld together.
