Ingredients
- 1 1/2 cups dried fava beans
- 4 cups water
- 2 ripe tomatoes, chopped
- 1/4 cup extra virgin olive oil
- 2 cloves garlic, minced
- Salt to taste
- Black pepper to taste
- 1 tablespoon fresh parsley, chopped
Instructions
- Rinse the fava beans under cold water and place them in a large pot with 4 cups of water. Bring to a boil, then reduce the heat and simmer for about 20 minutes, or until the beans are very soft.
- Drain the beans and transfer them to a food processor. Add the chopped tomatoes, olive oil, minced garlic, salt, and black pepper. Blend until smooth.
- Transfer the fava and tomato mixture to a serving bowl and garnish with chopped parsley. Drizzle with additional olive oil if desired.
