Fava Me Domates (fava Bean And Tomato Dip)

Ingredients

  • 1 1/2 cups dried fava beans
  • 4 cups water
  • 2 ripe tomatoes, chopped
  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Rinse the fava beans under cold water and place them in a large pot with 4 cups of water. Bring to a boil, then reduce the heat and simmer for about 20 minutes, or until the beans are very soft.
  2. Drain the beans and transfer them to a food processor. Add the chopped tomatoes, olive oil, minced garlic, salt, and black pepper. Blend until smooth.
  3. Transfer the fava and tomato mixture to a serving bowl and garnish with chopped parsley. Drizzle with additional olive oil if desired.
