Feijão Tropeiro Nachos (Nachos de Feijão Tropeiro)

Ingredients
- 1 can of black beans, drained and rinsed
- 1 cup of cooked white rice
- 4 slices of bacon, diced
- 1 small onion, chopped
- 2 cloves of garlic, minced
- 1 cup of collard greens, thinly sliced
- 1/2 cup of cassava flour (farinha de mandioca)
- 1/2 cup of chopped green onions
- 1 cup of shredded cheese (cheddar or mozzarella)
- 1 bag of tortilla chips
- Salt and pepper to taste
Instructions
- In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
- Add the chopped onion and minced garlic to the skillet with the bacon fat and sauté until the onion is translucent.
- Add the collard greens to the skillet and cook until wilted.
- Stir in the black beans and cooked white rice, mixing well with the onion, garlic, and collard greens.
- Sprinkle the cassava flour over the mixture and stir until well combined. Cook for a few more minutes to allow the flavors to meld.
- Preheat the oven to 350°F (175°C).
- Spread the tortilla chips in a single layer on a baking sheet or oven-safe dish.
- Spoon the feijão tropeiro mixture over the tortilla chips, then sprinkle the cooked bacon and shredded cheese on top.
- Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and sprinkle the chopped green onions over the nachos.
- Serve hot and enjoy!
