Feijão Tropeiro Nachos (Nachos de Feijão Tropeiro)

Ingredients

  • 1 can of black beans, drained and rinsed
  • 1 cup of cooked white rice
  • 4 slices of bacon, diced
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup of collard greens, thinly sliced
  • 1/2 cup of cassava flour (farinha de mandioca)
  • 1/2 cup of chopped green onions
  • 1 cup of shredded cheese (cheddar or mozzarella)
  • 1 bag of tortilla chips
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.
  2. Add the chopped onion and minced garlic to the skillet with the bacon fat and sauté until the onion is translucent.
  3. Add the collard greens to the skillet and cook until wilted.
  4. Stir in the black beans and cooked white rice, mixing well with the onion, garlic, and collard greens.
  5. Sprinkle the cassava flour over the mixture and stir until well combined. Cook for a few more minutes to allow the flavors to meld.
  6. Preheat the oven to 350°F (175°C).
  7. Spread the tortilla chips in a single layer on a baking sheet or oven-safe dish.
  8. Spoon the feijão tropeiro mixture over the tortilla chips, then sprinkle the cooked bacon and shredded cheese on top.
  9. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and sprinkle the chopped green onions over the nachos.
  11. Serve hot and enjoy!
