Feke (octopus) Salad

Ingredients

  • 2 lbs fresh octopus, cleaned and tenderized
  • 1 cucumber, thinly sliced
  • 1 red onion, thinly sliced
  • 1 red bell pepper, diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of water to a boil. Add the octopus and cook for 15-20 minutes until tender. Drain and let it cool.
  2. Once cooled, slice the octopus into bite-sized pieces and place in a large mixing bowl.
  3. Add the cucumber, red onion, red bell pepper, and cilantro to the bowl with the octopus.
  4. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour the dressing over the octopus and vegetables, and toss to combine.
  5. Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
