Feke (octopus) Salad
Feke (Octopus) Salad is a traditional Niuean dish that showcases the island's abundant seafood. This refreshing salad is a perfect balance of tender octopus, fresh vegetables, and a zesty dressing.
Ingredients
- 2 lbs fresh octopus, cleaned and tenderized
- 1 cucumber, thinly sliced
- 1 red onion, thinly sliced
- 1 red bell pepper, diced
- 1/4 cup chopped fresh cilantro
- 1/4 cup lime juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Bring a large pot of water to a boil. Add the octopus and cook for 15-20 minutes until tender. Drain and let it cool.
- Once cooled, slice the octopus into bite-sized pieces and place in a large mixing bowl.
- Add the cucumber, red onion, red bell pepper, and cilantro to the bowl with the octopus.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour the dressing over the octopus and vegetables, and toss to combine.
- Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
