Ingredients
- 2 lbs octopus, cleaned and cut into bite-sized pieces
- 2 cups coconut milk
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, diced
- 1 red chili, sliced (optional)
- Salt and pepper to taste
Instructions
- In a large pot, combine the octopus, coconut milk, onion, garlic, and ginger.
- Place the pot over medium heat and bring the mixture to a gentle simmer.
- Cook for 45-50 minutes, or until the octopus is tender.
- Add the tomatoes and red chili, if using, and simmer for an additional 10 minutes.
- Season with salt and pepper to taste.
