Felicidad De Quimbolito (quimbolito Bliss)

Ingredients

  • 2 cups of corn flour
  • 1 cup of sugar
  • 1/2 cup of butter, melted
  • 1/2 cup of raisins
  • 1/2 cup of shredded coconut
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 teaspoon of vanilla extract
  • 8 banana leaves, cut into 8x8 inch squares

Instructions

  1. In a large bowl, mix the corn flour, sugar, baking powder, and salt.
  2. Add the melted butter, raisins, shredded coconut, and vanilla extract to the dry ingredients. Mix well.
  3. Place a banana leaf square on a flat surface and spoon some of the mixture onto the center. Fold the leaf to form a packet and secure with kitchen twine.
  4. Repeat the process with the remaining mixture and banana leaves.
  5. Place the quimbolitos in a steamer and steam for 1 hour.
  6. Remove from the steamer and let them cool before serving.
