Felicidad De Quimbolito (quimbolito Bliss)
Felicidad de Quimbolito, or Quimbolito Bliss, is a traditional Ecuadorian dessert that brings joy to anyone who tastes it. This sweet and moist treat is perfect for sharing with friends and family.
Ingredients
- 2 cups of corn flour
- 1 cup of sugar
- 1/2 cup of butter, melted
- 1/2 cup of raisins
- 1/2 cup of shredded coconut
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1 teaspoon of vanilla extract
- 8 banana leaves, cut into 8x8 inch squares
Instructions
- In a large bowl, mix the corn flour, sugar, baking powder, and salt.
- Add the melted butter, raisins, shredded coconut, and vanilla extract to the dry ingredients. Mix well.
- Place a banana leaf square on a flat surface and spoon some of the mixture onto the center. Fold the leaf to form a packet and secure with kitchen twine.
- Repeat the process with the remaining mixture and banana leaves.
- Place the quimbolitos in a steamer and steam for 1 hour.
- Remove from the steamer and let them cool before serving.
