Felicidad Vasca (basque Bliss)
Felicidad Vasca, or Basque Bliss, is a traditional dish from the Basque region of Southern Europe. This hearty and flavorful stew is a celebration of the region's rich culinary heritage.
Ingredients
- 2 lbs beef chuck, cut into cubes
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 bell peppers, sliced
- 4 tomatoes, diced
- 1 cup beef broth
- 1/2 cup dry red wine
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium-high heat.
- Add the beef cubes and brown on all sides. Remove from the pot and set aside.
- Add the onions and garlic to the pot and sauté until softened.
- Return the beef to the pot and add the bell peppers, tomatoes, beef broth, red wine, paprika, cayenne pepper, salt, and pepper.
- Bring the stew to a boil, then reduce the heat to low and simmer for 2 hours, stirring occasionally.
- Once the beef is tender and the flavors have melded, remove from heat and let it rest for a few minutes before serving.
