Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 bell peppers, sliced
  • 4 tomatoes, diced
  • 1 cup beef broth
  • 1/2 cup dry red wine
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add the beef cubes and brown on all sides. Remove from the pot and set aside.
  3. Add the onions and garlic to the pot and sauté until softened.
  4. Return the beef to the pot and add the bell peppers, tomatoes, beef broth, red wine, paprika, cayenne pepper, salt, and pepper.
  5. Bring the stew to a boil, then reduce the heat to low and simmer for 2 hours, stirring occasionally.
  6. Once the beef is tender and the flavors have melded, remove from heat and let it rest for a few minutes before serving.
