Ingredients
- 4 cups cooked jasmine rice, chilled
- 4 large eggs, beaten
- 1 cup diced carrots
- 1 cup diced bell peppers (red and green)
- 1 cup frozen peas, thawed
- 1 cup diced cooked chicken or tofu for vegetarian option
- 4 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 2 tablespoons vegetable oil
- 1 teaspoon sesame oil
- 1/2 teaspoon white pepper
- 1/4 cup chopped scallions for garnish
Instructions
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
- Pour the beaten eggs into the wok and scramble until just set. Remove the eggs from the wok and set aside.
- Heat the remaining vegetable oil in the wok and add the carrots, bell peppers, and peas. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
- Add the diced chicken or tofu to the wok and stir-fry for another 2 minutes.
- Add the chilled jasmine rice to the wok, breaking up any clumps, and stir-fry for 3-4 minutes until heated through.
- Drizzle the soy sauce and oyster sauce over the rice, then add the white pepper and sesame oil. Stir-fry for an additional 2 minutes.
- Return the scrambled eggs to the wok and toss everything together until well combined.
- Transfer the fried rice to a serving platter and garnish with chopped scallions.
