Ingredients

  • 4 cups cooked jasmine rice, chilled

  • 1 cup diced cooked chicken or tofu for vegetarian option
  • 4 tablespoons soy sauce
  • 2 tablespoons oyster sauce

  • 1 teaspoon sesame oil
  • 1/2 teaspoon white pepper
  • 1/4 cup chopped scallions for garnish

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
  2. Pour the beaten eggs into the wok and scramble until just set. Remove the eggs from the wok and set aside.
  3. Heat the remaining vegetable oil in the wok and add the carrots, bell peppers, and peas. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  4. Add the diced chicken or tofu to the wok and stir-fry for another 2 minutes.
  5. Add the chilled jasmine rice to the wok, breaking up any clumps, and stir-fry for 3-4 minutes until heated through.
  6. Drizzle the soy sauce and oyster sauce over the rice, then add the white pepper and sesame oil. Stir-fry for an additional 2 minutes.
  7. Return the scrambled eggs to the wok and toss everything together until well combined.
  8. Transfer the fried rice to a serving platter and garnish with chopped scallions.
