Feng Li Fan (pineapple Fried Rice)

Ingredients

  • 2 cups cooked white rice
  • 1 cup fresh pineapple, diced
  • 1/2 cup frozen peas and carrots, thawed
  • 1/2 cup firm tofu, diced
  • 3 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1/4 cup cashew nuts, chopped
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
  2. Add the minced garlic and stir-fry for 1 minute until fragrant.
  3. Push the garlic to the side of the pan, pour the beaten eggs into the empty space, and scramble until cooked.
  4. Add the diced tofu to the pan and cook for 2-3 minutes until lightly browned.
  5. Stir in the cooked rice, pineapple, peas, and carrots. Cook for 3-4 minutes, stirring constantly.
  6. Add soy sauce, salt, and pepper to the pan. Stir well to combine all the ingredients.
  7. Finally, add the chopped cashew nuts and green onions. Stir-fry for another 1-2 minutes.
  8. Remove from heat and serve the Feng Li Fan hot, garnished with additional green onions if desired.
