Feng Li Fan (pineapple Fried Rice)
Feng Li Fan, also known as Pineapple Fried Rice, is a popular dish in Guangxi Cuisine. This flavorful and colorful dish combines the sweetness of pineapple with the savory goodness of fried rice, creating a delightful balance of flavors and textures.
Ingredients
- 2 cups cooked white rice
- 1 cup fresh pineapple, diced
- 1/2 cup frozen peas and carrots, thawed
- 1/2 cup firm tofu, diced
- 3 cloves garlic, minced
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1/4 cup cashew nuts, chopped
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
- Add the minced garlic and stir-fry for 1 minute until fragrant.
- Push the garlic to the side of the pan, pour the beaten eggs into the empty space, and scramble until cooked.
- Add the diced tofu to the pan and cook for 2-3 minutes until lightly browned.
- Stir in the cooked rice, pineapple, peas, and carrots. Cook for 3-4 minutes, stirring constantly.
- Add soy sauce, salt, and pepper to the pan. Stir well to combine all the ingredients.
- Finally, add the chopped cashew nuts and green onions. Stir-fry for another 1-2 minutes.
- Remove from heat and serve the Feng Li Fan hot, garnished with additional green onions if desired.
