Fennel Gratin (lyonnaise-style Gratin De Fenouil)

Ingredients

  • 2 large fennel bulbs, trimmed and sliced
  • 1 cup heavy cream
  • 1 cup grated Gruyère cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1/4 cup breadcrumbs

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the sliced fennel in a pot of boiling salted water and cook for 5 minutes. Drain and set aside.
  3. In a saucepan, heat the heavy cream, Gruyère cheese, Parmesan cheese, and garlic over medium heat. Stir until the cheese is melted and the mixture is smooth. Season with salt and pepper.
  4. Butter a baking dish and arrange the blanched fennel slices in the dish. Pour the cheese mixture over the fennel.
  5. Melt the remaining butter and mix it with the breadcrumbs. Sprinkle the breadcrumb mixture over the top of the gratin.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden and bubbly.
  7. Remove from the oven and let it cool for a few minutes before serving.
