Fennel Gratin (lyonnaise-style Gratin De Fenouil)
Fennel Gratin, also known as Gratin de Fenouil, is a classic dish from Lyonnaise cuisine. This creamy and flavorful gratin is a perfect side dish to accompany a variety of main courses.
Ingredients
- 2 large fennel bulbs, trimmed and sliced
- 1 cup heavy cream
- 1 cup grated Gruyère cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons butter
- 1/4 cup breadcrumbs
Instructions
- Preheat the oven to 375°F (190°C).
- Place the sliced fennel in a pot of boiling salted water and cook for 5 minutes. Drain and set aside.
- In a saucepan, heat the heavy cream, Gruyère cheese, Parmesan cheese, and garlic over medium heat. Stir until the cheese is melted and the mixture is smooth. Season with salt and pepper.
- Butter a baking dish and arrange the blanched fennel slices in the dish. Pour the cheese mixture over the fennel.
- Melt the remaining butter and mix it with the breadcrumbs. Sprinkle the breadcrumb mixture over the top of the gratin.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
