Fenugreek Buttermilk (menthi Majjiga)

Ingredients

  • 2 cups buttermilk
  • 1/2 cup fresh fenugreek leaves, chopped
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon grated ginger
  • 1 green chili, finely chopped
  • Salt to taste
  • 1 tablespoon oil
  • 1/2 teaspoon mustard seeds
  • 1/4 teaspoon asafoetida (hing)
  • 5-6 curry leaves

Instructions

  1. In a bowl, whisk the buttermilk until smooth.
  2. Add chopped fenugreek leaves, cumin seeds, grated ginger, green chili, and salt to the buttermilk. Mix well.
  3. Heat oil in a small pan and add mustard seeds. Once they start to splutter, add asafoetida and curry leaves. Pour this tempering over the buttermilk mixture and stir gently.
  4. Refrigerate the fenugreek buttermilk for at least 30 minutes before serving.
