Fermented Peppers
Fermented peppers are a delicious and tangy addition to any meal. This recipe will guide you through the process of fermenting your own peppers at home.
Ingredients
- 1 pound fresh peppers (such as jalapeños, serranos, or bell peppers)
- 2-3 cloves garlic, peeled
- 2 tablespoons sea salt
- Filtered water
Instructions
- Wash the peppers and remove the stems. Slice them into rounds or leave them whole, depending on your preference.
- Place the peppers and garlic cloves in a clean quart-sized glass jar, leaving some space at the top.
- Dissolve the sea salt in 4 cups of filtered water to create a brine. Pour the brine over the peppers, making sure they are fully submerged. Leave about an inch of headspace at the top of the jar.
- Place a weight on top of the peppers to keep them submerged under the brine. This can be a small glass weight or a clean, food-safe object that fits inside the jar.
- Place a lid loosely on the jar to allow gases to escape during fermentation.
- Store the jar in a cool, dark place for 7-14 days, depending on how tangy you want the peppers to be. Check the jar every day to make sure the peppers remain submerged and to skim off any foam that may form on the surface.
- Once the peppers reach your desired level of tanginess, secure the lid tightly and move the jar to the refrigerator to slow down the fermentation process.
- Your fermented peppers are now ready to enjoy! Use them to add a zesty kick to sandwiches, tacos, salads, and more.
