Ingredients
- 500g white fish fillets, such as cod or haddock
- 1 onion, diced
- 2 garlic cloves, minced
- 2 large potatoes, diced
- 2 cups fish or vegetable stock
- 1 cup whole milk or coconut milk
- 2 tbsp butter or olive oil
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- In a large pot, melt the butter or heat the olive oil over medium heat.
- Add the diced onion and minced garlic, and sauté until softened.
- Add the diced potatoes, fish stock, and bay leaf to the pot. Bring to a simmer and cook until the potatoes are tender.
- Gently add the fish fillets to the pot and simmer until the fish is cooked through.
- Pour in the milk and stir gently to combine. Season with salt and pepper to taste.
- Simmer for a few more minutes to allow the flavors to meld together.
- Remove the bay leaf and discard.
- Serve the chowder hot, garnished with chopped fresh parsley.
