Ingredients

  • 500g white fish fillets, such as cod or haddock
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 large potatoes, diced
  • 2 cups fish or vegetable stock
  • 1 cup whole milk or coconut milk
  • 2 tbsp butter or olive oil
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot, melt the butter or heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, and sauté until softened.
  3. Add the diced potatoes, fish stock, and bay leaf to the pot. Bring to a simmer and cook until the potatoes are tender.
  4. Gently add the fish fillets to the pot and simmer until the fish is cooked through.
  5. Pour in the milk and stir gently to combine. Season with salt and pepper to taste.
  6. Simmer for a few more minutes to allow the flavors to meld together.
  7. Remove the bay leaf and discard.
  8. Serve the chowder hot, garnished with chopped fresh parsley.
